Last week as part of a networking event I attended for work I took part in a bake off. That’s my kind of team building by the way!!
We were provided with some basic ingredients and $5 to buy additional supplies.
I was dobbed in as an avid cook so took over the recipe as non-bossily as I could. And our team won the challenge!
So, here’s my award winning strawberry, white chocolate and yoghurt muffin recipe:
2 cups SR flour
1/4 cup caster sugar – I don’t normally add sugar as I prefer honey and vanilla essence personally but that’s what we had on hand
2 large eggs
1/2 cup vegetable or coconut oil
1 cup plain yoghurt
1 punnet strawberries, chopped
1/4 cup white chocolate chips – again I’m not mad for white chocolate and I would usually use dark chocolate chips
Preheat oven to 180 degrees Celsius.
Grease a 12 hole muffin tin.
Sift flour and sugar in a large-ish bowl.
Mix oil, yoghurt and eggs together. The trick with muffins is to stir the dry and wet ingredients as little as possible so really whip these up nicely.
Then carefully mix the wet ingredients into the dry ingredients until just combined.
Lastly, add the strawberries and chocolate chips.
Pour or spoon into muffin tin.
Bake for 20-30 minutes until quite set and brown on top.
Leave for a few minutes to cool before cooling completely on a rack.
We grated some white chocolate on top and even added a dash of muesli to the top of some before we baked them but that’s just extra fanciness and not needed. 🙂
